This recipe fits all the weeknight cooking requirements: quick, easy, and sure to be enjoyed.

- Preheat the oven to 180C.
- Place the chicken and broccoli in a large mixing bowl. If you prefer it crunchy use raw broccoli. If you prefer it soft, steam it in the microwave for 2 to 3 minutes first.
- Sautee the onion in coconut oil with salt and pepper. When the onion is soft and slightly brown (about 3 to 5 minutes), add the cream cheese to the sautee pan. When the cream cheese is melted, whsk in the chicken broth until the mixture is smooth.
- Allow it to simmer for about a minute, or until the sauce thickens slightly.
- Add the cream cheese and oinon mixture to the chicken and broccoli. Mix well. Add half the grated cheese and mix again. Season with salt and pepper to taste. Spread the mixture evenly in a baking pan. Add the remaining cheese on top.
- Bake for 25 to 30 minutes until the cheese is melted and the casserole is bubbling.
